A fresh and vibrant Thai style chicken slaw recipe made with crunchy vegetables, tender chicken, and a zesty lime dressing. This healthy, flavorful salad is quick to prepare and perfect for a light lunch or refreshing dinner.

Ingredients

  • 2 cups cooked chicken, shredded or sliced
  • 2 cups green cabbage, finely shredded
  • 1 cup red cabbage, finely shredded
  • 1 cup carrots, julienned
  • 1 red bell pepper, thinly sliced
  • 3 spring onions, sliced
  • ¼ cup fresh coriander leaves
  • ¼ cup fresh mint leaves
  • ¼ cup roasted peanuts, chopped

For the Dressing:

  • 3 tbsp lime juice
  • 2 tbsp fish sauce
  • 1 tbsp soy sauce
  • 12 tbsp honey or brown sugar
  • 1 tsp sesame oil
  • 2 cloves garlic, minced
  • 1-inch ginger, grated
  • 1 small chili, finely chopped (optional)

Instructions

  • In a large bowl, combine green cabbage, red cabbage, carrots, bell pepper, and spring onions.
  • Add the cooked chicken and toss to combine.
  • In a small bowl, whisk together lime juice, fish sauce, soy sauce, honey (or sugar), sesame oil, garlic, and ginger.
  • Pour the dressing over the slaw and toss well to coat evenly.
  • Add coriander and mint leaves, gently mixing through.
  • Top with chopped peanuts and optional chili.
  • Serve immediately for the best texture and flavor.

Notes

Add dressing just before serving to keep the slaw crisp.Use rotisserie chicken for convenience.Adjust sweetness and spice to taste.Store dressing separately if making ahead.
