Ingredients

  • 12 ounces surimi (imitation crab meat), shredded or chopped
  • 1/2 cup mayonnaise
  • 1 tablespoon lemon juice
  • 1 teaspoon Dijon mustard
  • 1 stalk celery, finely diced
  • 2 green onions, thinly sliced
  • 1 tablespoon fresh parsley, chopped
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • Optional: 1 teaspoon Old Bay seasoning
  • Lettuce leaves, for serving

Instructions

  • Place the shredded or chopped surimi in a large mixing bowl.
  • Add the diced celery, sliced green onions, and chopped parsley.
  • In a small bowl, whisk together the mayonnaise, lemon juice, Dijon mustard, salt, black pepper, and Old Bay seasoning if using.
  • Pour the dressing over the surimi mixture.
  • Gently stir until all ingredients are evenly coated.
  • Cover and refrigerate for at least 30 minutes to allow the flavors to meld together.
  • Serve chilled on lettuce leaves, in sandwiches, wraps, croissants, or alongside crackers.
