These Raspberry Palmiers are crisp, flaky puff pastry cookies filled with sweet raspberry jam and caramelized sugar. With their signature heart shape and golden layers, this easy palmier recipe is perfect for elegant desserts, tea-time treats, or quick bakery-style pastries at home.

Ingredients

  • 1 sheet puff pastry, thawed
  • 1/3 cup granulated sugar (plus extra for rolling)
  • 1/3 cup raspberry jam or preserves
  • 1/4 cup fresh raspberries (optional)
  • Powdered sugar, for dusting

Instructions

  • Preheat oven to 200°C (400°F) and line a baking sheet with parchment paper.
  • Sprinkle a clean work surface with granulated sugar and roll out puff pastry into a rectangle, pressing sugar into the dough.
  • Spread a thin, even layer of raspberry jam over the pastry. Add fresh raspberries if using, pressing them gently into the jam.
  • Starting from both long sides, roll the edges inward toward the center until they meet in the middle.
  • Wrap and chill the rolled pastry for 15–20 minutes to firm up.
  • Slice into 1 cm thick pieces and place flat on the prepared baking sheet, leaving space between each.
  • Bake for 12–15 minutes, flipping halfway through, until golden and caramelized.
  • Cool slightly, then dust with powdered sugar before serving
