These pikelets are soft, fluffy mini pancakes that are quick and easy to make. Perfect for breakfast, tea time, or snacks, they’re lightly sweet and delicious served with butter, jam, or fresh fruit.

Ingredients

  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 2 tablespoons granulated sugar
  • 1/4 teaspoon salt
  • 3/4 cup milk
  • 1 large egg
  • 1/2 teaspoon vanilla extract (optional)
  • Butter or oil, for cooking

Instructions

  • In a mixing bowl, whisk together the flour, baking powder, sugar, and salt.
  • In a separate bowl, whisk the milk, egg, and vanilla extract until combined.
  • Pour the wet ingredients into the dry ingredients and stir gently until a smooth batter forms. Do not overmix.
  • Heat a non-stick pan or griddle over medium heat and lightly grease with butter or oil.
  • Drop small spoonfuls of batter onto the pan to form mini rounds.
  • Cook for 1–2 minutes, until bubbles appear on the surface and edges look set.
  • Flip and cook for another minute until golden and cooked through.
  • Transfer to a plate and repeat with remaining batter.
  • Serve warm with butter, jam, honey, or your favorite toppings

Notes

Avoid overmixing the batter to keep pikelets light and fluffy.If the batter is too thick, add a splash of milk to loosen it.Keep cooked pikelets warm in a low oven while finishing the batch.Add berries or chocolate chips for variation.For savory pikelets, reduce sugar and add cheese or herbs.
