Ingredients

wild rice

Instructions

  • Rinse wild rice under cold water. In a saucepan, combine rice and broth and bring to a boil.
  • Reduce heat, cover, and simmer for 40–45 minutes, until the rice is tender and grains have split open. Drain excess liquid if needed.
  • In a large skillet, heat olive oil or butter over medium heat. Add chopped onion and celery, cooking until softened.
  • Stir in garlic and cook for about 1 minute until fragrant.
  • Add cooked wild rice, dried cranberries, and pecans to the skillet. Toss to combine.
  • Season with salt, black pepper, and thyme. Cook for a few minutes to blend flavors.
