Ingredients

  • lbs baby potatoes or small Yukon Gold potatoes, washed and dried
  • 1 cup grated Parmesan cheese
  • 4 cloves garlic, minced
  • 2 tablespoons olive oil
  • 3 tablespoons butter, melted
  • 1 teaspoon Italian seasoning
  • 1 teaspoon paprika
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 2 tablespoons fresh parsley, chopped (for garnish)

Instructions

  • Preheat the oven to 400°F (200°C).
  • Wash and thoroughly dry the potatoes. If using larger potatoes, cut them in half.
  • In a small bowl, combine the Parmesan cheese, minced garlic, Italian seasoning, paprika, salt, and black pepper.
  • Pour the melted butter and olive oil into a baking dish or sheet pan, spreading evenly across the bottom.
  • Sprinkle the Parmesan mixture evenly over the butter and oil layer.
  • Arrange the potatoes cut-side down on top of the Parmesan coating.
  • Roast for 35–40 minutes, or until the potatoes are fork-tender and the bottoms are deeply golden brown and crispy.
  • Remove from the oven and allow the potatoes to rest for 2–3 minutes.
  • Carefully lift the potatoes from the pan and transfer to a serving platter.
  • Garnish with chopped fresh parsley and serve immediately.
