Ingredients

  • Coconut oil
  • Garlic, minced
  • Fresh ginger or galangal, sliced
  • Lemongrass stalks, bruised
  • Vegetable broth
  • Coconut milk
  • Mushrooms, sliced
  • Carrots, sliced
  • Red bell pepper, sliced
  • Firm tofu, cubed
  • Soy sauce or tamari
  • Lime juice
  • Maple syrup or sugar
  • Fresh cilantro

Instructions

  • Heat coconut oil in a pot over medium heat. Add garlic, ginger (or galangal), and lemongrass; sauté until fragrant.
  • Pour in vegetable broth and bring to a simmer. Cook for about 10 minutes to infuse flavors.
  • Add coconut milk, mushrooms, carrots, and red bell pepper. Simmer until vegetables are tender.
  • Stir in tofu and cook for a few minutes until heated through.
  • Season with soy sauce (or tamari), lime juice, and maple syrup. Adjust to taste for balance.
  • Remove lemongrass pieces before serving.
  • Garnish with fresh cilantro and serve hot.
