This Turkish delight rocky road is a rich, no-bake dessert loaded with chocolate, marshmallows, crunchy biscuits, and chewy Turkish delight. Easy to make and full of texture, it’s the perfect indulgent treat for sharing or special occasions.

Ingredients

  • 400 g milk or dark chocolate
  • 100 g unsalted butter
  • 3 tablespoons golden syrup
  • 2 cups plain biscuits, roughly crushed
  • 1 1/2 cups mini marshmallows
  • 1 cup Turkish delight, chopped
  • Powdered sugar or cocoa powder, for dusting (optional)

Instructions

  • Line an 8-inch (20 cm) square baking pan with parchment paper.
  • Break the chocolate into pieces and place in a heatproof bowl with butter and golden syrup.
  • Melt gently using a double boiler or microwave in short bursts, stirring until smooth.
  • In a large bowl, combine crushed biscuits, marshmallows, and chopped Turkish delight.
  • Pour the melted chocolate mixture over the dry ingredients and mix until well coated.
  • Transfer the mixture into the prepared pan and press it down evenly.
  • Refrigerate for 2–3 hours, or until fully set.
  • Remove from the pan and slice into squares or bars.
  • Dust with powdered sugar or cocoa powder if desired before serving.
