Ingredients

  • 4 cups cornflakes cereal
  • ¾ cup creamy peanut butter
  • 12 tablespoons white or yellow miso paste
  • ⅓ cup honey or maple syrup
  • 2 tablespoons unsalted butter or coconut oil
  • 1 cup dark or semi-sweet chocolate, melted
  • 1 teaspoon vanilla extract
  • Pinch of salt (optional, for topping)

Instructions

  • Line an 8×8-inch square baking pan with parchment paper.
  • In a saucepan over low heat, melt peanut butter, miso paste, honey or maple syrup, and butter or coconut oil, stirring until smooth.
  • Remove from heat and stir in vanilla extract.
  • Place cornflakes in a large bowl and gently pour the peanut butter mixture over them.
  • Fold carefully until the cornflakes are evenly coated without crushing them.
  • Transfer the mixture to the prepared pan and press gently into an even layer.
  • Spread melted chocolate evenly over the top.
  • Sprinkle a pinch of salt if desired.
  • Refrigerate for about 1 hour, or until fully set.
  • Cut into bars and serve.
