Ingredients

  • 2 cups all-purpose flour
  • 1 cup finely ground almonds
  • 1 cup unsalted butter, softened
  • ¾ cup granulated sugar
  • 2 egg yolks
  • 1 teaspoon vanilla extract
  • 1 teaspoon lemon zest
  • ¼ teaspoon salt
  • ½ teaspoon baking powder
  • ½ cup fruit jam (raspberry or apricot)
  • Powdered sugar, for dusting

Instructions

  • In a bowl, whisk together flour, ground almonds, baking powder, and salt.
  • In another bowl, cream butter and sugar until light and fluffy.
  • Add egg yolks, vanilla extract, and lemon zest; mix until combined.
  • Gradually incorporate the dry ingredients to form a soft dough.
  • Wrap the dough and chill for at least 1 hour.
  • Preheat oven to 180°C (350°F) and line baking sheets with parchment paper.
  • Roll out dough to about 3 mm thickness on a floured surface.
  • Cut out cookies, creating a small window in half of them.
  • Bake for 10–12 minutes until lightly golden.
  • Cool completely on a rack.
  • Spread jam on the bottom cookies, then top with cut-out cookies.
  • Dust with powdered sugar before serving.
