Ingredients

  • Frozen dumplings (chicken, or vegetable)
  • Thai red or green curry paste
  • Coconut milk
  • Garlic (minced)
  • Ginger (grated)
  • Onion (chopped)
  • Fish sauce or soy sauce
  • Brown sugar
  • Lime juice
  • Vegetable oil
  • Bell peppers (sliced)
  • Spinach or bok choy
  • Fresh coriander (cilantro)
  • Optional: chili flakes
  • Optional: peanuts or cashews

Instructions

  • Preheat oven to 180°C.
  • Heat oil in a pan and sauté onion, garlic, and ginger until fragrant.
  • Stir in curry paste and cook briefly to release flavors.
  • Add coconut milk, fish sauce or soy sauce, and brown sugar. Simmer until slightly thickened.
  • Stir in lime juice and add vegetables, cooking briefly until just tender.
  • Pour the curry sauce into a baking dish.
  • Arrange dumplings in the sauce, ensuring they are partially submerged.
  • Bake for 25–30 minutes until dumplings are cooked through and sauce is bubbling.
  • Garnish with fresh coriander and optional nuts before serving.

Notes
