This Tabboule is a fresh and vibrant Middle Eastern salad made with finely chopped parsley, bulgur wheat, tomatoes, and a zesty lemon-olive oil dressing. Light, healthy, and full of flavor, this easy tabboule recipe is perfect as a refreshing side dish or appetizer.

Ingredients

  • Fine bulgur wheat
  • Fresh parsley, finely chopped
  • Fresh mint, chopped
  • Tomatoes, diced
  • Green onions, finely sliced
  • Lemon juice
  • Olive oil
  • Salt
  • Black pepper

Instructions

  1. Place bulgur in a bowl and cover with warm water. Let soak for 10–15 minutes until tender, then drain well.
  2. Finely chop parsley and mint, keeping the texture light and fluffy.
  3. Add chopped herbs to a large mixing bowl.
  4. Stir in diced tomatoes and sliced green onions.
  5. Add the softened bulgur to the bowl.
  6. Pour in lemon juice and olive oil.
  7. Season with salt and black pepper to taste.
  8. Toss gently until well combined.
  9. Let rest for 10 minutes before serving to allow flavors to meld.

Notes

Use mostly parsley for an authentic herb-forward flavor.Drain bulgur thoroughly to prevent excess moisture.For extra crunch, add diced cucumber.Adjust lemon juice to taste for more brightness.
