Skillet Nachos are the ultimate crowd-pleasing appetizer, loaded with crispy tortilla chips, seasoned taco meat, melty cheese, black beans, and fresh toppings. Baked in a cast-iron skillet and served hot from the oven, these easy nachos are perfect for game days, parties, family gatherings, or casual weeknight meals.

Ingredients

  • 10 ounces tortilla chips
  • 1 pound ground beef or ground turkey
  • 1 packet (1 ounce) taco seasoning
  • 1 small onion, diced
  • 2 garlic cloves, minced
  • 1½ cups cheddar cheese, shredded
  • 1½ cups Monterey Jack cheese, shredded
  • 1 cup black beans, drained and rinsed
  • 12 jalapeños, sliced
  • 1 cup diced tomatoes
  • ¼ cup green onions, sliced
  • ½ cup sour cream
  • ½ cup guacamole
  • 2 tablespoons fresh cilantro, chopped
  • 1 tablespoon olive oil
  • ½ teaspoon salt
  • ¼ teaspoon black pepper

Instructions

  • Preheat the oven to 400°F (200°C).
  • Heat a cast-iron skillet over medium heat and add the olive oil.
  • Add the diced onion and cook for 3–4 minutes until softened.
  • Stir in the garlic and cook for 30 seconds until fragrant.
  • Add the ground beef or turkey and cook until browned, breaking it apart as it cooks.
  • Drain excess grease if necessary.
  • Stir in the taco seasoning and prepare according to package directions, adding water as needed.
  • Remove the skillet from the heat.
  • Spread a layer of tortilla chips evenly across the skillet.
  • Sprinkle with a portion of the cheddar cheese, Monterey Jack cheese, seasoned meat, black beans, and jalapeños.
  • Add another layer of chips and repeat with the remaining toppings.
  • Finish with the remaining cheese.
  • Bake for 8–10 minutes, or until the cheese is melted, bubbly, and lightly golden.
  • Remove from the oven and top with diced tomatoes, green onions, cilantro, sour cream, and guacamole.
  • Serve immediately while hot.

Notes

Freshly shredded cheese melts more smoothly than pre-shredded varieties.For extra heat, use pepper jack cheese or add additional jalapeños.Rotisserie chicken can be substituted for ground beef or turkey.To make vegetarian skillet nachos, replace the meat with additional black beans, pinto beans, or roasted vegetables.Assemble just before baking to keep the chips crisp.Add queso sauce after baking for an extra cheesy version.
