Ingredients

For the Cake

  • 2 ripe pears, peeled and thinly sliced
  • 1 cup almond flour
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon ground cardamom
  • ¼ teaspoon salt
  • ½ cup unsalted butter, softened
  • ¾ cup granulated sugar
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • ½ teaspoon almond extract
  • ¼ cup milk or heavy cream

For Topping

  • ¼ cup sliced almonds
  • Powdered sugar, for dusting (optional)

Instructions

  • Preheat the oven to 350°F (175°C).
  • Grease and line an 8-inch or 9-inch round cake pan with parchment paper.
  • In a medium bowl, whisk together the almond flour, all-purpose flour, baking powder, cardamom, and salt.
  • In a large mixing bowl, cream the butter and sugar until light and fluffy, about 3–4 minutes.
  • Add the eggs one at a time, beating well after each addition.
  • Mix in the vanilla extract and almond extract.
  • Gradually add the dry ingredients, alternating with the milk or cream, mixing until just combined.
  • Pour the batter into the prepared cake pan and smooth the top with a spatula.
  • Arrange the pear slices decoratively over the surface of the batter.
  • Sprinkle the sliced almonds evenly over the top.
  • Bake for 40–50 minutes, or until a toothpick inserted into the center comes out clean.
  • Allow the cake to cool in the pan for 10 minutes.
  • Transfer to a wire rack and cool completely.
  • Dust with powdered sugar before serving if desired.
