This passionfruit slice is a soft, buttery dessert topped with a tangy passionfruit icing. Easy to make and bursting with tropical flavor, it’s the perfect sweet treat for afternoon tea, gatherings, or a refreshing dessert.

Ingredients

  • 1 1/2 cups all-purpose flour
  • 3/4 cup granulated sugar
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 125 g unsalted butter, melted
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 1/2 cups powdered sugar
  • 23 tablespoons passionfruit pulp (fresh or canned)
  • 12 teaspoons lemon juice (optional)

Instructions

  • Preheat oven to 180°C (350°F) and line an 8-inch (20 cm) square baking pan with parchment paper.
  • In a bowl, combine flour, sugar, baking powder, and salt.
  • Add melted butter, egg, and vanilla extract, mixing until a smooth batter forms.
  • Spread the batter evenly into the prepared pan.
  • Bake for 20–25 minutes, or until lightly golden and set.
  • Allow the base to cool completely in the pan.
  • In a separate bowl, mix powdered sugar with passionfruit pulp and lemon juice until thick and spreadable.
  • Spread the icing over the cooled base and smooth the top.
  • Let the icing set before slicing into squares.

Notes

Adjust icing consistency by adding more powdered sugar if too runny.Fresh passionfruit gives a brighter flavor, but canned works well too.Let the slice cool completely before icing to prevent melting.Add shredded coconut to the base for extra texture.Chill briefly for cleaner slicing if needed.
