Orzo and halloumi salad is a fresh and vibrant dish made with tender orzo pasta, golden pan-fried halloumi cheese, and crisp vegetables tossed in a zesty lemon dressing. This easy Mediterranean-inspired salad is perfect as a light meal or flavorful side dish.

Ingredients

  • Orzo pasta
  • Halloumi cheese
  • Olive oil
  • Cherry tomatoes
  • Cucumber
  • Red onion
  • Lemon juice
  • Garlic
  • Fresh parsley or mint
  • Salt
  • Black pepper

Instructions

  • Cook orzo in salted boiling water until al dente. Drain and let cool slightly.
  • Cut halloumi into bite-sized pieces. Heat olive oil in a pan and fry until golden on all sides. Remove and set aside.
  • In a large bowl, combine orzo, cherry tomatoes, cucumber, and red onion.
  • In a small bowl, whisk olive oil, lemon juice, garlic, salt, and black pepper.
  • Pour dressing over the orzo mixture and toss to combine.
  • Gently fold in halloumi and fresh herbs.
  • Taste, adjust seasoning, and serve warm or chilled.

Notes

Add extra dressing before serving if the orzo absorbs too much.Fry halloumi just before serving for the best texture.Use fresh lemon juice for brighter flavor.Great served both warm or as a cold pasta salad.
