Ingredients

  • Chicken thighs or drumsticks
  • Olive oil
  • Garlic cloves
  • Onion
  • Carrots
  • Zucchini
  • Bell peppers
  • Couscous
  • Chicken broth
  • Tomato paste
  • Paprika
  • Cumin
  • Salt
  • Black pepper
  • Fresh parsley

Instructions

  1. Preheat your oven to 180°C (350°F).
  2. Heat olive oil in a large oven-safe pot over medium heat. Sear the chicken until golden on both sides, then remove and set aside.
  3. In the same pot, sauté onion and garlic until fragrant.
  4. Add carrots, zucchini, and bell peppers, cooking for a few minutes until slightly softened.
  5. Stir in tomato paste, paprika, cumin, salt, and black pepper, letting the spices bloom.
  6. Pour in chicken broth and bring to a gentle simmer.
  7. Stir in couscous, then place the seared chicken on top.
  8. Cover and transfer to the oven. Roast for 35–45 minutes until chicken is cooked through and couscous is tender.
  9. Remove from the oven and let rest for a few minutes.
  10. Fluff couscous with a fork, garnish with fresh parsley, and serve.
