Miso Roasted Sweet Potatoes are a sweet and savory side dish featuring tender roasted sweet potatoes coated in a rich miso glaze. Caramelized around the edges and packed with umami flavor, these easy roasted sweet potatoes make a nutritious addition to weeknight dinners, holiday menus, grain bowls, and meal prep.

Ingredients

  • 2 pounds sweet potatoes, peeled and cut into 1-inch cubes or wedges
  • 2 tablespoons white or yellow miso paste
  • 2 tablespoons olive oil
  • 1 tablespoon maple syrup or honey
  • 1 tablespoon soy sauce or tamari
  • 1 tablespoon rice vinegar
  • 2 garlic cloves, minced
  • 1 teaspoon fresh ginger, grated
  • 1 teaspoon sesame oil
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 tablespoon sesame seeds, for garnish
  • 2 green onions, thinly sliced, for garnish

Instructions

  • Preheat the oven to 425°F (220°C).
  • Line a large baking sheet with parchment paper.
  • In a large mixing bowl, whisk together the miso paste, olive oil, maple syrup, soy sauce, rice vinegar, garlic, ginger, sesame oil, salt, and black pepper until smooth.
  • Add the sweet potatoes and toss until evenly coated with the miso glaze.
  • Spread the sweet potatoes in a single layer on the prepared baking sheet.
  • Roast for 25–30 minutes, stirring halfway through cooking.
  • Continue roasting until the sweet potatoes are fork-tender and caramelized around the edges.
  • Remove from the oven and allow to cool for 2–3 minutes.
  • Transfer to a serving dish and garnish with sesame seeds and sliced green onions.
  • Serve warm.
