This lolly cake is a fun, no-bake dessert made with crushed biscuits, sweetened condensed milk, and colorful chewy lollies, all rolled in coconut. Quick, easy, and perfect for parties, it’s a nostalgic treat loved by kids and adults alike.

Ingredients

  • 250 g plain biscuits, crushed
  • 395 g (1 can) sweetened condensed milk
  • 100 g unsalted butter
  • 1 1/2 cups fruit-flavored chewy lollies (marshmallow-style), chopped
  • 1/23/4 cup desiccated coconut

Instructions

  • Place crushed biscuits in a large mixing bowl.
  • Add the chopped lollies and mix to combine.
  • In a saucepan over low heat, melt the butter and condensed milk together until smooth.
  • Pour the mixture over the biscuits and lollies, stirring until evenly combined.
  • Lay out a sheet of baking paper and sprinkle a layer of desiccated coconut over it.
  • Spoon the mixture onto the coconut and shape into a log.
  • Roll the log in the coconut until fully coated.
  • Wrap tightly in baking paper and refrigerate for 2–3 hours, or until firm.
  • Slice into rounds and serve.
