These Loaded Smashed Potato Bites are crispy on the outside, fluffy on the inside, and topped with melty cheese, sour cream, and fresh green onions. This easy potato appetizer is perfect for parties, game days, or as a flavorful side dish using simple, everyday ingredients.

Ingredients

  • lbs baby potatoes
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 cup shredded cheddar cheese
  • ½ cup sour cream
  • 23 green onions, sliced

Instructions

  • Preheat oven to 200°C (400°F) and line a baking sheet with parchment paper.
  • Boil baby potatoes in salted water for 15–20 minutes until fork-tender.
  • Drain and let cool slightly.
  • Place potatoes on the baking sheet and gently smash each one using the bottom of a glass or fork.
  • Drizzle with olive oil and season with salt, pepper, and garlic powder.
  • Bake for 20–25 minutes until edges are crispy and golden.
  • Remove from oven and sprinkle with shredded cheese.
  • Return to oven for 5 minutes, until cheese is melted.
  • Top with sour cream and sliced green onions before serving.
