Ingredients

For the Cake

  • 2 ripe pears, peeled and thinly sliced
  • 1 cup almond flour
  • 1 cup all-purpose flour

  • ⅓ cup honey

Instructions

  • Preheat the oven to 350°F (175°C).
  • Grease and line an 8-inch or 9-inch round cake pan with parchment paper.
  • In a medium bowl, whisk together the almond flour, all-purpose flour, baking powder, salt, and cinnamon if using.
  • In a large mixing bowl, cream the butter, honey, and sugar until light and fluffy, about 3–4 minutes.
  • Add the eggs one at a time, mixing well after each addition.
  • Stir in the vanilla extract and almond extract.
  • Gradually add the dry ingredients, alternating with the milk, mixing until just combined.
  • Pour the batter into the prepared cake pan and smooth the top.
  • Arrange the pear slices decoratively over the batter.
  • Sprinkle the sliced almonds evenly over the surface.
  • Bake for 40–50 minutes, or until a toothpick inserted into the center comes out clean.
  • Allow the cake to cool in the pan for 10–15 minutes.
  • Transfer to a wire rack and cool completely.
  • Dust with powdered sugar before serving, if desired.
