Greek Salad Flatbreads are a fresh and flavorful Mediterranean-inspired meal featuring crisp vegetables, tangy feta cheese, Kalamata olives, and a zesty homemade dressing served over warm, crispy flatbread. Ingredients

  • 4 flatbreads or naan breads
  • 1 cup cherry tomatoes, halved
  • 1 medium cucumber, diced
  • ¼ cup red onion, thinly sliced
  • ½ cup Kalamata olives, sliced
  • ¾ cup feta cheese, crumbled
  • 2 cups romaine lettuce, chopped
  • 3 tablespoons olive oil
  • 1 tablespoon fresh lemon juice
  • 1 tablespoon red wine vinegar
  • 1 garlic clove, minced
  • 1 teaspoon dried oregano
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 2 tablespoons fresh parsley, chopped (for garnish)

Instructions

  • Preheat the oven to 400°F (200°C).
  • Arrange the flatbreads on a baking sheet and warm in the oven for 5–7 minutes until lightly crisp.
  • In a large mixing bowl, combine the cherry tomatoes, cucumber, red onion, Kalamata olives, romaine lettuce, and feta cheese.
  • In a small bowl, whisk together the olive oil, lemon juice, red wine vinegar, minced garlic, oregano, salt, and black pepper.
  • Pour the dressing over the salad mixture and toss gently until evenly coated.
  • Remove the flatbreads from the oven and allow them to cool slightly.
  • Divide the Greek salad mixture evenly among the flatbreads.
  • Garnish with fresh parsley and additional feta cheese if desired.
  • Slice and serve immediately.
