This Easy Baked French Toast Casserole is a rich, comforting breakfast bake made with soft bread soaked in a sweet cinnamon-vanilla custard and baked to golden perfection. Perfect for brunch, holidays, or meal prep, this make-ahead French toast casserole is simple, delicious, and ideal for feeding a crowd.

Ingredients

  • 6 cups bread (brioche or challah), cubed
  • 5 large eggs
  • 1 ½ cups milk
  • ½ cup heavy cream
  • ¼ cup granulated sugar
  • ¼ cup brown sugar
  • 2 teaspoons vanilla extract
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon nutmeg (optional)
  • ¼ teaspoon salt
  • 2 tablespoons butter, melted

Optional topping:

  • ¼ cup brown sugar
  • ¼ cup all-purpose flour
  • ½ teaspoon cinnamon
  • 3 tablespoons cold butter

Instructions

  • Grease a baking dish and spread cubed bread evenly inside.
  • In a large bowl, whisk together eggs, milk, cream, granulated sugar, brown sugar, vanilla, cinnamon, nutmeg, and salt.
  • Pour the custard evenly over the bread, pressing gently to soak all pieces.
  • Cover and refrigerate for at least 2 hours or overnight for best results.
  • Preheat oven to 180°C (350°F).
  • For the topping, mix brown sugar, flour, and cinnamon, then cut in cold butter until crumbly. Sprinkle over casserole.
  • Bake uncovered for 40–45 minutes, until golden and set in the center.
  • Let cool slightly before serving.

Notes

Slightly stale bread works best for absorbing the custard.Overnight chilling enhances flavor and texture.Add fruit or chocolate chips for variation.
