This Delicata Squash and Farro Bake is a wholesome, comforting dish featuring caramelized delicata squash, nutty farro, and savory herbs baked to perfection. Packed with texture and flavor, this hearty vegetarian recipe is perfect as a nourishing main course or a satisfying side dish.

Ingredients

  • 2 medium delicata squash, sliced into rings or نصف أقمار (half-moons)
  • 1 cup farro
  • 2 tbsp olive oil
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 2 cups vegetable broth
  • 12 tbsp fresh thyme or sage, chopped
  • ½ cup grated cheese (optional)
  • Salt (to taste)
  • Black pepper (to taste)

Instructions

  • Preheat Oven:
    Preheat oven to 200°C (400°F) and lightly grease a baking dish.
  • Cook Farro:
    Cook farro in salted water or vegetable broth according to package instructions until tender but chewy. Drain and set aside.
  • Roast Squash:
    Toss sliced delicata squash with olive oil, salt, and pepper. Spread on a baking sheet and roast for 20–25 minutes until tender and caramelized.
  • Sauté Aromatics:
    In a pan, heat olive oil and sauté onion and garlic until soft and fragrant.
  • Combine Base:
    Stir cooked farro into the pan with a splash of broth. Add herbs and season to taste.
  • Assemble:
    Combine farro mixture with roasted squash and transfer to a baking dish. Sprinkle cheese on top if using.
  • Bake:
    Bake for 15–20 minutes until heated through and lightly golden on top.
