This crispy cornflake slice is a quick and easy treat made with buttery golden syrup and crunchy cornflakes. Perfect for lunchboxes or snacks, this nostalgic recipe delivers a delicious balance of chewy and crispy textures with minimal effort

Ingredients

  • 4 cups cornflakes
  • 1/2 cup unsalted butter
  • 1/2 cup brown sugar
  • 1/3 cup golden syrup
  • 1 teaspoon vanilla extract (optional)
  • Pinch of salt

Instructions

  • Preheat your oven to 160°C (320°F) and line an 8-inch (20 cm) square baking pan with parchment paper.
  • In a saucepan over low heat, melt the butter, brown sugar, and golden syrup, stirring until smooth and fully combined.
  • Remove from heat and stir in the vanilla extract and a pinch of salt if using.
  • Place the cornflakes in a large bowl and pour the warm syrup mixture over them.
  • Gently fold until all the cornflakes are evenly coated.
  • Transfer the mixture into the prepared pan and press it down firmly into an even layer.
  • Bake for 12–15 minutes, or until the top is lightly golden.
  • Remove from the oven and allow to cool completely in the pan.
  • Once set, slice into squares or bars and serve.

Notes

Press the mixture firmly into the pan to help it hold together.For a no-bake version, refrigerate the mixture until set instead of baking.Add chocolate chips after slight cooling to prevent melting completely.Drizzle melted chocolate over the top for extra richness.Honey can be used instead of golden syrup for a slightly different flavor.
