Ingredients

  • Lasagne sheets
  • Cooked chicken (shredded or diced)
  • Mushrooms (sliced)
  • Onion (chopped)
  • Garlic (minced)
  • Butter
  • Olive oil
  • All-purpose flour
  • Milk
  • Chicken broth
  • Mozzarella cheese (shredded)
  • Parmesan cheese (grated)
  • Salt
  • Black pepper
  • Dried or fresh thyme
  • Optional: spinach
  • Optional: nutmeg

Instructions

  1. Preheat oven to 180°C.
  2. Heat olive oil and butter in a pan. Cook onion and garlic until softened.
  3. Add mushrooms and cook until golden and moisture has evaporated.
  4. Stir in cooked chicken, thyme, salt, and pepper. Set aside.
  5. In another pan, melt butter and stir in flour to form a roux.
  6. Gradually whisk in milk and chicken broth, stirring until smooth and thickened.
  7. Season the sauce with salt, pepper, and a pinch of nutmeg if using.
  8. Lightly grease a baking dish.
  9. Spread a layer of white sauce, then add lasagne sheets.
  10. Add a layer of chicken and mushroom mixture, followed by sauce and cheese.
  11. Repeat layers, finishing with sauce and a generous topping of mozzarella and parmesan.
  12. Bake for 40–45 minutes until golden and bubbling.
  13. Let rest before slicing and serving.
