This cheesy ground beef & cauliflower casserole is a creamy, low-carb comfort food packed with savory beef, tender cauliflower, and melted cheddar cheese. Ingredients

  • Ground beef
  • Cauliflower florets
  • Onion, diced
  • Garlic, minced
  • Cream cheese
  • Sour cream
  • Shredded cheddar cheese
  • Milk or heavy cream
  • Olive oil
  • Salt
  • Black pepper
  • Paprika
  • Italian seasoning

Instructions

  • Preheat oven to 180°C (350°F).
  • Boil cauliflower florets in salted water for 5–7 minutes until just tender. Drain thoroughly.
  • Heat olive oil in a skillet over medium heat. Cook onion until softened, then add garlic.
  • Add ground beef and cook until browned. Drain excess fat.
  • Reduce heat and stir in cream cheese, sour cream, and milk or cream until smooth.
  • Season with salt, pepper, paprika, and Italian seasoning.
  • Add cauliflower and gently mix to coat.
  • Transfer to a greased baking dish and spread evenly.
  • Top with shredded cheddar cheese.
  • Bake for 20–25 minutes until melted, bubbly, and lightly golden.
  • Let rest a few minutes before serving.

  • Drain cauliflower very well to prevent a watery casserole.
  • Roast cauliflower instead of boiling for deeper flavor.
  • Add chili flakes for a spicy variation.
