Ingredients

For the Chicken:

  • Chicken breasts
  • Olive oil
  • Garlic
  • Lemon juice

For the Salad:

  • Lettuce or mixed greens
  • Cherry tomatoes
  • Cucumber
  • Red onion
  • Avocado

For the Dressing:

  • Lemon juice or vinegar
  • Mustard
  • Honey

Instructions

  • In a bowl, combine olive oil, garlic, lemon juice, salt, pepper, and paprika. Coat the chicken and marinate for 15–30 minutes.
  • Heat a grill pan or outdoor grill over medium-high heat. Cook chicken for 10–12 minutes until charred and fully cooked.
  • Remove chicken, let it rest, then slice into strips.
  • In a large bowl, combine lettuce, cherry tomatoes, cucumber, red onion, and avocado.
  • In a small bowl, whisk together olive oil, lemon juice (or vinegar), mustard, honey, salt, and pepper.
  • Add sliced chicken to the salad and drizzle with dressing.
  • Toss gently or serve dressing on the side.
