Ingredients

For the Cake:

  • 1½ cups all-purpose flour
  • ½ cup granulated sugar
  • ½ cup brown sugar
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp ground cinnamon
  • ½ tsp ground nutmeg
  • ½ tsp salt
  • 3 eggs
  • ¾ cup vegetable oil
  • 1 tsp vanilla extract
  • 2 cups grated carrots
  • ½ cup chopped walnuts or pecans (optional)
  • ½ cup raisins (optional)

For the Cream Cheese Icing:

  • 250 g cream cheese (softened)
  • ½ cup butter (softened)
  • 2 cups powdered sugar

Instructions

  1. Preheat oven to 180°C (350°F) and grease and line a cake pan.
  2. In a bowl, whisk flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
  3. In another bowl, whisk eggs, granulated sugar, brown sugar, oil, and vanilla extract.
  4. Gradually combine dry ingredients with wet mixture until just mixed.
  5. Fold in grated carrots, nuts, and raisins if using.
  6. Pour batter into the prepared pan and spread evenly.
  7. Bake for 35–45 minutes until a skewer inserted comes out clean.
  8. Cool completely before frosting.

For the Icing:
9. Beat cream cheese and butter until smooth.
10. Gradually add powdered sugar until creamy and spreadable.
11. Spread evenly over the cooled cake.
