Ingredients

  • 1 cup all-purpose flour
  • ¼ cup unsweetened cocoa powder
  • 1 tsp baking powder
  • 1 cup sugar
  • 3 eggs
  • ½ cup milk
  • ½ cup vegetable oil or melted butter
  • 1 tsp vanilla extract
  • 2 cups heavy whipping cream
  • ¼ cup powdered sugar
  • 1½ cups cherries (fresh, canned, or jarred)
  • ½ cup cherry syrup or juice
  • 100 g dark chocolate (for shavings)

Instructions

  • Preheat oven to 180°C (350°F). Grease and line two round cake pans.
  • Sift together flour, cocoa powder, and baking powder.
  • In another bowl, whisk eggs and sugar until light and fluffy.
  • Add milk, oil (or butter), and vanilla extract; mix well.
  • Gradually fold in dry ingredients until smooth.
  • Divide batter evenly and bake for 25–30 minutes. Cool completely.
  • Whip cream with powdered sugar until soft peaks form.
  • Slice each cake into two layers (total of four layers).
  • Brush each layer with cherry syrup.
  • Layer cake with whipped cream and cherries between each layer.
  • Finish with whipped cream on top and decorate with chocolate shavings and cherries.
  • Chill for at least 1 hour before serving.
