Fresh zucchini slices are topped with savory pizza sauce, melted mozzarella cheese, and classic pizza toppings, then baked until bubbly and golden. Ingredients

  • 2 medium zucchini, sliced into ¼-inch rounds

  • ½ cup pizza sauce

  • 1 cup shredded mozzarella cheese

  • ¼ cup mini pepperoni slices

  • 1 tablespoon olive oil

  • 1 teaspoon Italian seasoning

  • ½ teaspoon garlic powder

  • ¼ teaspoon salt

  • ¼ teaspoon black pepper

  • 2 tablespoons grated parmesan cheese

  • 1 tablespoon fresh basil, chopped (optional)

Instructions

  • Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.

  • Wash the zucchini and slice them into ¼-inch thick rounds.

  • Arrange the zucchini slices in a single layer on the prepared baking sheet.

  • Lightly brush the slices with olive oil and sprinkle with garlic powder, salt, pepper, and Italian seasoning.

  • Bake the zucchini for 5 minutes to slightly soften them and remove excess moisture.

  • Remove the tray from the oven and add a small spoonful of pizza sauce onto each slice.

  • Sprinkle shredded mozzarella cheese evenly over the sauce.

  • Add mini pepperoni slices or your favorite toppings.

  • Sprinkle grated parmesan cheese over the top for extra flavor.

  • Return to the oven and bake for 8–10 minutes, until the cheese is melted and bubbly.

  • Garnish with fresh chopped basil if desired and serve warm.
