This Zucchini Ground Beef Casserole is a hearty, low-carb dish featuring layers of tender zucchini, seasoned ground beef, tomato sauce, and melted cheese. Perfect for family dinners or meal prep, it’s a nutritious and satisfying comfort food.

Ingredients

  • 1 lb ground beef
  • 2 medium zucchini, sliced into thin rounds
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 cup shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 1 tbsp olive oil
  • 1 cup tomato sauce (sugar-free if keto)
  • 1 tsp Italian seasoning
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Instructions

  • Preheat your oven to 375°F (190°C).
  • In a large skillet over medium heat, heat olive oil and sauté chopped onion and garlic until fragrant.
  • Add ground beef and cook until browned. Drain any excess fat.
  • Stir in tomato sauce, Italian seasoning, salt, and pepper. Simmer for a few minutes.
  • Slice zucchini into thin rounds. Optionally, salt them and let sit for 10–15 minutes to reduce moisture, then blot with paper towels.
  • In a greased 8×8 or 9×13-inch casserole dish, layer half of the zucchini, half of the meat mixture, and a layer of shredded cheddar cheese. Repeat layers.
  • Top with shredded mozzarella cheese.
  • Cover with foil and bake for 25 minutes. Remove foil and bake for another 10–15 minutes until cheese is bubbly and golden.
  • Let the casserole rest for 5–10 minutes before serving.

Notes

Use lean ground beef (80–90%) to reduce excess grease.Can substitute ground turkey or chicken for a lighter version.For a less watery casserole, salt and blot zucchini slices before layering.Freezes well before or after baking.Add extra vegetables like mushrooms, spinach, or bell peppers for variety.
