Zucchini Cheese Bites are crispy, cheesy, and savory bites made with grated zucchini, cheese, and breadcrumbs. Perfect as a snack, appetizer, or side dish, they are a fun and flavorful way to enjoy zucchini.

Ingredients

  • 2 medium zucchinis, grated
  • 1 cup shredded cheese (cheddar, mozzarella, or a blend)
  • ½ cup breadcrumbs (use gluten-free breadcrumbs if needed)
  • 1 large egg
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • 2 tablespoons fresh parsley, chopped (optional)
  • Olive oil or cooking spray (for greasing)

Instructions

  1. Preheat the oven to 375°F (190°C). Line a baking sheet with parchment paper or lightly grease it with olive oil or cooking spray.
  2. Grate the zucchinis using a box grater or food processor. Place the grated zucchini in a clean kitchen towel or cheesecloth and squeeze out any excess moisture. This ensures your bites don’t turn out soggy.
  3. In a large bowl, combine the grated zucchini, shredded cheese, breadcrumbs, egg, garlic, oregano, salt, and pepper. Stir until well mixed and the mixture holds together.
  4. Using your hands, scoop out small portions of the mixture and shape them into bite-sized patties. Place the patties on the prepared baking sheet.
  5. Bake for 20-25 minutes, or until the bites are golden brown and crispy on the outside.
  6. Remove from the oven and let them cool for a few minutes before serving. Garnish with fresh parsley, if desired, and serve with your favorite dipping sauce.
