Za’atar Chicken is a flavorful and aromatic Middle Eastern dish made with chicken seasoned with za’atar spice blend, olive oil, garlic, and lemon. It’s easy to prepare and results in juicy, golden chicken that’s perfect for weeknight dinners or special occasions.

Ingredients

  • 4 chicken thighs or breasts (bone-in or boneless)
  • 2 tablespoons za’atar seasoning
  • 2 tablespoons olive oil
  • 3 garlic cloves, minced
  • 2 tablespoons lemon juice
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • Optional: fresh parsley for garnish

Instructions

  1. Preheat oven to 400°F (200°C) if roasting.
  2. In a bowl, mix olive oil, lemon juice, minced garlic, salt, pepper, and za’atar seasoning.
  3. Pat the chicken dry and place it in a large bowl or zip-top bag.
  4. Pour the marinade over the chicken and mix well to coat. Let it marinate for at least 30 minutes or up to overnight.
  5. Arrange the chicken pieces on a baking sheet or oven-safe dish.
  6. Roast for 30–40 minutes, or until the chicken is golden and cooked through (internal temperature of 165°F / 74°C).
  7. For extra crispiness, broil the chicken for an additional 3–5 minutes.
  8. Garnish with fresh parsley if desired and serve hot.
