Ingredients

  • 2 cups cooked chicken breasts or thighs, shredded
  • 1 cup uncooked wild rice
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 2 tbsp olive oil or butter
  • 6 cups chicken broth
  • 1 cup heavy cream or half-and-half
  • 2 tbsp all-purpose flour
  • 1 tsp fresh thyme or rosemary
  • 1 bay leaf
  • Salt and black pepper, to taste

Instructions

  1. Heat olive oil or butter in a large pot over medium heat. Sauté onion, carrots, celery, and garlic until softened.
  2. Stir in the wild rice and toast for 1–2 minutes.
  3. Add chicken broth, bay leaf, and thyme. Bring to a boil, then reduce heat and simmer uncovered for 40–45 minutes, until rice is tender.
  4. In a small bowl, whisk flour with a splash of cream to form a slurry. Stir into the soup to thicken.
  5. Add shredded chicken and remaining cream. Simmer for another 5–10 minutes until creamy and heated through.
  6. Remove bay leaf, season with salt and pepper, and adjust to taste.
  7. Serve hot, garnished with fresh herbs if desired.
