Whole Wheat Cherry Chocolate Chip Bread is a moist and hearty quick bread that combines the richness of chocolate chips with the natural sweetness of cherries and the nutty goodness of whole wheat flour. Perfect for breakfast, snacks, or dessert.

Ingredients

  • 1 1/2 cups whole wheat flour
  • 1/2 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 teaspoon ground cinnamon (optional)
  • 1/2 cup unsweetened applesauce (or mashed banana)
  • 1/4 cup honey or maple syrup
  • 1/4 cup milk (any kind, or a non-dairy alternative)
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup fresh or frozen cherries, pitted and chopped
  • 1/2 cup mini chocolate chips (or more, depending on preference)

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a 9×5-inch loaf pan or line it with parchment paper.
  2. In a medium bowl, whisk together the whole wheat flour, baking soda, baking powder, salt, and cinnamon (if using).
  3. In a separate large bowl, whisk together the applesauce (or mashed banana), honey (or maple syrup), milk, eggs, and vanilla extract until well combined.
  4. Gradually add the dry ingredients to the wet ingredients, stirring gently until just combined. Be careful not to overmix.
  5. Gently fold in the chopped cherries and mini chocolate chips, making sure they are evenly distributed in the batter.
  6. Pour the batter into the prepared loaf pan and smooth the top with a spatula.
  7. Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean (a few moist crumbs are okay). If the top starts to brown too quickly, cover the bread loosely with aluminum foil.
  8. Let the bread cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely. Slice and serve once fully cooled.

Notes

  • For longer storage, refrigerate the bread for up to 1 week or freeze it for up to 2 months. To freeze, slice the bread, wrap in plastic wrap, and place in a freezer-safe bag or container.
  • You can add nuts like walnuts, almonds, or pecans for extra crunch.
  • Use dried cherries if fresh ones are unavailable, reducing the sweetener slightly due to their added sweetness.
  • For a vegan version, replace the eggs with flax eggs and use plant-based milk and sweetener.
