Ingredients

  • 12 oz elbow macaroni or pasta of choice
  • 2 cups sharp white cheddar cheese, shredded
  • 2 cups whole milk or half-and-half
  • 1/2 cup heavy cream (optional, for extra richness)
  • 3 tablespoons unsalted butter
  • 3 tablespoons all-purpose flour
  • 1/2 teaspoon salt (or to taste)
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon ground mustard or 1 teaspoon Dijon mustard (optional)
  • 1/4 teaspoon garlic powder (optional)
  • 1/4 teaspoon paprika (optional, for garnish or flavor)

Instructions

  1. Cook pasta in salted boiling water according to package directions until al dente. Drain and set aside.
  2. In a large saucepan, melt butter over medium heat.
  3. Whisk in flour to form a roux and cook for 1–2 minutes, stirring constantly to remove raw flour taste.
  4. Gradually whisk in milk and cream, stirring constantly until smooth and thickened, about 3–5 minutes.
  5. Stir in salt, pepper, mustard, and garlic powder if using.
  6. Reduce heat to low and add shredded white cheddar. Stir until fully melted and smooth.
  7. Add cooked pasta to the sauce and stir until evenly coated.
  8. Serve immediately, garnished with paprika or extra cheese if desired.
