White Bean Dip with Roasted Garlic is a creamy and savory dip made with tender white beans and sweet roasted garlic. Ingredients

  • 2 cups cooked white beans (such as cannellini or great northern beans) or 1 can (15 oz) white beans, drained and rinsed
  • 1 head garlic
  • 1 tablespoon olive oil (for roasting garlic)
  • 1 tablespoon olive oil (for the dip)
  • 2 tablespoons fresh lemon juice
  • 1/2 teaspoon salt (or to taste)
  • 1/4 teaspoon black pepper
  • 1 teaspoon fresh thyme or rosemary (optional, for flavor)
  • 1/4 cup tahini (optional for creaminess)
  • 2 tablespoons water (or more for desired consistency)
  • Fresh parsley or chives (optional, for garnish)

Instructions

  1. Preheat your oven to 375°F (190°C). Slice the top off a head of garlic to expose the cloves. Drizzle a little olive oil over the cut side, then wrap the garlic in aluminum foil. Roast in the oven for 30-35 minutes, or until the cloves are soft and golden brown. Remove from the oven and let it cool.
  2. Squeeze the roasted garlic cloves out of their skins and set aside.
  3. In a food processor or blender, combine the cooked white beans, roasted garlic, olive oil, lemon juice, salt, pepper, and optional tahini. Blend until smooth. Add water, one tablespoon at a time, until the dip reaches the desired consistency. It should be creamy but not too runny.
  4. If desired, stir in fresh thyme or rosemary for extra flavor.
  5. Taste and adjust the seasoning with more salt, pepper, or lemon juice as needed.
  6. Transfer the dip to a serving bowl and garnish with fresh parsley or chives, if desired. Serve with pita chips, crackers, fresh veggies, or spread on toast.
