Whipped Shortbread Cookies are soft, buttery, and melt-in-your-mouth treats made with just a few simple ingredients. Their light texture and rich flavor make them perfect for holidays or everyday indulgence.

Ingredients

  • 1 cup unsalted butter, softened
  • 1/2 cup powdered sugar
  • 1 1/2 cups all-purpose flour
  • 1/4 cup cornstarch
  • 1 tsp vanilla extract
  • Optional toppings: sprinkles, chocolate drizzle, candied cherries

Instructions

  1. Preheat oven to 300°F (150°C) and line baking sheets with parchment paper.
  2. In a large bowl, beat the softened butter and powdered sugar until light and fluffy.
  3. Add the vanilla extract and mix until combined.
  4. Gradually add the flour and cornstarch, mixing until the dough comes together and is airy.
  5. Drop spoonfuls of dough or pipe using a star tip onto the prepared baking sheet.
  6. Decorate with sprinkles or press a candied cherry into the center, if desired.
  7. Bake for 15–18 minutes, or until the bottoms are lightly golden. Do not overbake.
  8. Let cookies cool completely on a wire rack before serving.
