Wasabi Mashed Potatoes are a bold, flavorful twist on the classic mashed potatoes, featuring creamy potatoes with a spicy kick from wasabi. Perfect for adding excitement to any meal, these potatoes are a unique and delicious side dish.

Ingredients

  • 2 pounds russet potatoes, peeled and cut into chunks
  • 4 tablespoons unsalted butter
  • ½ cup milk (or more, as needed)
  • 1 tablespoon wasabi paste (adjust to taste)
  • Salt and pepper to taste
  • Chopped green onions or chives (optional, for garnish)

Instructions

  1. Place the peeled and chopped potatoes into a large pot and cover them with cold water. Bring to a boil over high heat, then reduce to a simmer and cook until the potatoes are tender, about 15-20 minutes.
  2. Drain the potatoes and return them to the pot.
  3. Add the butter and mash the potatoes with a potato masher or use a hand mixer for a smoother texture.
  4. Slowly add the milk, a little at a time, until the potatoes reach your desired level of creaminess.
  5. Stir in the wasabi paste, starting with 1 tablespoon and adding more if you want a stronger flavor. Taste and adjust seasoning with salt and pepper.
  6. Once everything is combined and smooth, transfer the mashed potatoes to a serving bowl.
  7. Garnish with chopped green onions or chives if desired, and serve immediately.

Notes

For a vegan version, replace the butter with vegan butter and use non-dairy milk such as almond or coconut milk.Add sour cream or cream cheese for extra creaminess and a mild tang to complement the wasabi. For more heat, add extra wasabi or include finely chopped fresh chili peppers.Roasted garlic or sautéed garlic can be added for a garlic-infused twist.
