Velveeta queso is a rich, creamy, and smooth cheese dip made with Velveeta and Rotel. This quick and easy appetizer is perfect for parties, game day, or anytime you need a melty, crowd-pleasing snack.

Ingredients

  • 1 lb (16 oz) Velveeta cheese, cubed (original or Mexican blend)
  • 1 can (10 oz) Rotel (diced tomatoes with green chilies), undrained
  • Optional: 1/2 lb ground beef or sausage, cooked and drained
  • Optional: 1–2 tablespoons diced jalapeños
  • Optional: 1–2 teaspoons hot sauce
  • Optional: 1/4 cup diced onions
  • Optional: 1/4 cup black beans
  • Optional: 2 tablespoons chopped green onions or cilantro (for garnish)

Instructions

  1. Cut Velveeta cheese into small cubes for quicker melting.
  2. In a large saucepan or skillet, combine Velveeta and the undrained Rotel.
  3. Heat over medium, stirring frequently, until cheese is fully melted and mixture is smooth.
  4. If using meat, cook and drain it separately, then stir into the melted cheese mixture.
  5. Add optional ingredients such as jalapeños, hot sauce, onions, or beans if desired.
  6. Once combined and heated through, transfer to a serving bowl or slow cooker set to “warm.”
  7. Garnish with chopped green onions or cilantro if using.
  8. Serve hot with tortilla chips or preferred dippers.

Notes

Use Velveeta Queso Blanco for a white cheese variation.Add milk or cream if the queso becomes too thick.Keep warm in a slow cooker during parties to maintain smooth texture.Can be made ahead and reheated—stir frequently while reheating.Freezing is not recommended as it affects the texture.
