Vegetable soup is a hearty and nourishing dish made with a variety of fresh vegetables simmered in a savory broth. Simple, customizable, and comforting, it’s perfect as a light meal or paired with bread for a satisfying dinner.

Ingredients

  • 2 tbsp olive oil
  • 1 onion, chopped
  • 3 garlic cloves, minced
  • 3 carrots, sliced
  • 2 celery stalks, chopped
  • 2 medium potatoes, diced
  • 1 cup green beans, trimmed and cut
  • 1 zucchini, chopped
  • 1 cup corn kernels
  • 2 cups cabbage, shredded (optional)
  • 1 (14 oz) can diced tomatoes
  • 6 cups vegetable broth
  • 1 bay leaf
  • 1 tsp dried thyme or Italian seasoning
  • Salt and pepper, to taste
  • 2 tbsp fresh parsley, chopped (for garnish)

Instructions

  1. Heat olive oil in a large pot over medium heat. Sauté onion, garlic, carrots, and celery until softened, about 5 minutes.
  2. Add potatoes, green beans, zucchini, corn, and cabbage (if using). Stir well to combine.
  3. Pour in diced tomatoes and vegetable broth. Add bay leaf, thyme, salt, and pepper.
  4. Bring to a boil, then reduce heat and let simmer for 25–30 minutes, until vegetables are tender.
  5. Remove bay leaf. Taste and adjust seasoning as needed.
  6. Garnish with fresh parsley before serving.

Notes

Add beans or lentils for extra protein.Swap in seasonal vegetables like squash, spinach, or peas.Use chicken broth instead of vegetable broth for a non-vegetarian version.Add a pinch of red pepper flakes for spice.Stir in small pasta or rice for a heartier meal.Freezes well for up to 3 months.
