Ingredients

For the Soup:

  • 1 tbsp olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 carrots, sliced
  • 2 celery stalks, chopped
  • 1 zucchini, diced
  • 6 cups vegetable broth
  • 1 tbsp soy sauce
  • Salt, to taste
  • Black pepper, to taste
  • Fresh parsley, chopped

For the Dumplings:

  • 1 cup all-purpose flour
  • 2 tsp baking powder
  • ½ tsp salt
  • ½ cup milk
  • 2 tbsp butter, melted

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add chopped onion and cook until softened, then stir in garlic.
  3. Add carrots, celery, and zucchini; sauté for 3–5 minutes.
  4. Pour in vegetable broth and soy sauce. Season with salt and pepper. Bring to a gentle boil.
  5. In a bowl, mix flour, baking powder, and salt.
  6. Stir in milk and melted butter to form a soft dough.
  7. Drop spoonfuls of dough into the simmering soup.
  8. Cover and cook for 10–15 minutes until dumplings are fluffy and cooked through.
  9. Taste and adjust seasoning.
  10. Garnish with fresh parsley and serve warm.
