Vegan Sweet Potato Pie is a dairy-free and egg-free twist on the classic Southern dessert. With a creamy, spiced sweet potato filling and a flaky vegan crust, it’s a comforting and crowd-pleasing treat perfect for holidays or any cozy occasion.

Ingredients

  • 2 cups cooked and mashed sweet potatoes
  • 3/4 cup full-fat coconut milk (or other non-dairy milk)
  • 1/2 cup brown sugar or coconut sugar
  • 1/4 cup maple syrup
  • 2 tbsp cornstarch or arrowroot powder
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/4 tsp ground ginger
  • 1 tsp vanilla extract
  • 1/4 tsp salt
  • 1 vegan pie crust (store-bought or homemade)

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a large mixing bowl, combine mashed sweet potatoes, coconut milk, sugar, maple syrup, cornstarch, cinnamon, nutmeg, ginger, vanilla, and salt.
  3. Whisk or blend the mixture until smooth and creamy.
  4. Pour the filling into the vegan pie crust and smooth the top with a spatula.
  5. Bake for 50–60 minutes, or until the center is mostly set and edges are firm.
  6. Remove from oven and let cool completely at room temperature.
  7. Chill in the refrigerator for at least 2 hours before slicing and serving.
