Ingredients

  • 1 1/2 cups all-purpose flour
  • 1 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 2 tsp vanilla extract
  • 1/2 cup whole milk
  • Optional: frosting of choice (buttercream, cream cheese, or whipped cream)

Instructions

  1. Preheat oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  2. In a medium bowl, whisk together flour, baking powder, and salt.
  3. In a large bowl, cream butter and sugar until light and fluffy.
  4. Beat in eggs one at a time, then mix in vanilla extract.
  5. Gradually add the dry ingredients, alternating with milk, until just combined.
  6. Divide batter evenly among cupcake liners, filling each about two-thirds full.
  7. Bake for 18–22 minutes, or until a toothpick inserted comes out clean.
  8. Cool completely before frosting and decorating as desired.

Notes
