Vanilla Bean Scones are soft, buttery pastries infused with real vanilla bean for a rich and aromatic flavor. These easy homemade scones are perfect for breakfast, brunch, or afternoon tea, with a tender crumb and lightly sweet taste.

Ingredients

  • 2 cups all-purpose flour
  • 1/3 cup granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, cold and cubed
  • 1/2 cup heavy cream
  • 1 egg
  • 1 tablespoon vanilla bean paste (or seeds from 1 vanilla bean)
  • 1 teaspoon vanilla extract

Optional Glaze:

  • 1 cup powdered sugar
  • 23 tablespoons milk or cream
  • 1/2 teaspoon vanilla extract

Instructions

  1. Preheat oven to 200°C (400°F) and line a baking sheet with parchment paper.
  2. In a bowl, whisk together flour, sugar, baking powder, and salt.
  3. Cut in cold butter using a pastry cutter or fingers until mixture resembles coarse crumbs.
  4. In another bowl, whisk cream, egg, vanilla bean paste, and vanilla extract.
  5. Pour wet ingredients into dry ingredients and mix until just combined.
  6. Turn dough onto a floured surface and gently knead a few times.
  7. Pat dough into a circle about 2–3 cm thick and cut into wedges.
  8. Place scones on prepared baking sheet.
  9. Bake for 15–18 minutes or until lightly golden.
  10. Cool slightly before glazing if desired.

For Glaze:
11. Mix powdered sugar, milk, and vanilla until smooth.
12. Drizzle over cooled scones.

Notes

Keep butter cold for flaky scones.Do not overmix the dough to avoid dense texture.Vanilla bean paste gives the best flavor and speckled look.You can freeze unbaked scones and bake from frozen.Add white chocolate chips for extra sweetness.
