This Triple Berry Cobbler is a warm, comforting dessert featuring juicy strawberries, blueberries, and raspberries under a golden, buttery crust. Easy to make and perfect for any season, this classic cobbler is ideal served on its own or with a scoop of ice cream for a crowd-pleasing treat.

Ingredients

For the Berry Filling:

  • 1 cup fresh or frozen strawberries, sliced

  • 1 cup fresh or frozen blueberries

  • 1 cup fresh or frozen raspberries

  • ½ cup granulated sugar

  • ¼ cup brown sugar

  • 2 tablespoons cornstarch

  • 1 tablespoon lemon juice

  • 1 teaspoon vanilla extract

For the Topping:

  • 1 cup all-purpose flour

  • 1½ teaspoons baking powder

  • ¼ teaspoon salt

  • ½ cup unsalted butter, melted

  • ½ cup milk

  • Coarse sugar for sprinkling (optional)

Instructions

  • Preheat oven to 375°F (190°C). Lightly grease a baking dish.

  • In a large bowl, combine berries with granulated sugar, brown sugar, cornstarch, lemon juice, and vanilla. Toss until evenly coated.

  • Pour berry mixture into the prepared dish, spreading evenly.

  • In another bowl, whisk flour, baking powder, and salt. Stir in melted butter and milk until a soft dough forms.

  • Drop spoonfuls of dough over the berry filling, leaving gaps for bubbling. Sprinkle coarse sugar on top if desired.

  • Bake 35–45 minutes, until topping is golden and filling bubbles around the edges.

  • Cool slightly before serving to allow filling to thicken. Serve warm, optionally with ice cream or whipped cream.

Frozen berries can be used; no need to thaw.
