This Triple Berry Cobbler is a warm, comforting dessert featuring juicy strawberries, blueberries, and raspberries under a golden, buttery crust. Easy to make and perfect for any season, this classic cobbler is ideal served on its own or with a scoop of ice cream for a crowd-pleasing treat.
For the Berry Filling:
1 cup fresh or frozen strawberries, sliced
1 cup fresh or frozen blueberries
1 cup fresh or frozen raspberries
½ cup granulated sugar
¼ cup brown sugar
2 tablespoons cornstarch
1 tablespoon lemon juice
1 teaspoon vanilla extract
For the Topping:
1 cup all-purpose flour
1½ teaspoons baking powder
¼ teaspoon salt
½ cup unsalted butter, melted
½ cup milk
Preheat oven to 375°F (190°C). Lightly grease a baking dish.
In a large bowl, combine berries with granulated sugar, brown sugar, cornstarch, lemon juice, and vanilla. Toss until evenly coated.
Pour berry mixture into the prepared dish, spreading evenly.
In another bowl, whisk flour, baking powder, and salt. Stir in melted butter and milk until a soft dough forms.
Drop spoonfuls of dough over the berry filling, leaving gaps for bubbling. Sprinkle coarse sugar on top if desired.
Bake 35–45 minutes, until topping is golden and filling bubbles around the edges.
Cool slightly before serving to allow filling to thicken. Serve warm, optionally with ice cream or whipped cream.
Frozen berries can be used; no need to thaw.
