A cozy one-pan pasta dish made with cheese tortellini simmered in a rich tomato sauce and topped with melted mozzarella and Parmesan. Quick, comforting, and perfect for busy weeknights.

Ingredients

  • 1 lb refrigerated cheese tortellini
  • 2 tbsp olive oil
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 1 (28 oz) can crushed tomatoes or 3 cups marinara sauce
  • 1 cup chicken or vegetable broth
  • 1 tsp Italian seasoning
  • Salt and pepper, to taste
  • 1/4 tsp red pepper flakes (optional)
  • 1 1/2 cups shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • Fresh basil or parsley for garnish (optional)

Instructions

  1. Heat olive oil in a large skillet over medium heat. Sauté the onion for 3–4 minutes until softened.
  2. Add garlic and cook for 30 seconds until fragrant.
  3. Pour in crushed tomatoes or marinara and broth. Add Italian seasoning, salt, pepper, and red pepper flakes. Stir well.
  4. Add refrigerated tortellini and gently stir to coat.
  5. Bring to a simmer, cover, and cook for 7–8 minutes until tortellini is tender.
  6. Remove the lid and sprinkle mozzarella and Parmesan over the top.
  7. Cover again and cook for 2–3 minutes until cheese is melted and bubbly.
  8. Garnish with fresh basil or parsley before serving.

Notes

Add cooked sausage or ground beef for extra protein.Stir in heavy cream or cream cheese for a creamy version.Mix in spinach, mushrooms, or zucchini for added veggies.Use pesto or Alfredo sauce to switch up the flavor profile.
