Tortellini Pasta Salad is a hearty, colorful, and flavorful dish made with cheese-filled tortellini, fresh vegetables, herbs, and a zesty dressing. It’s perfect as a side for gatherings or as a light main course.

Ingredients

  • 20 oz cheese-filled tortellini (fresh or frozen)
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/2 red onion, finely chopped
  • 1 bell pepper, diced
  • 1/2 cup black olives, sliced
  • 1 cup mozzarella balls or cubes
  • 1/4 cup Parmesan cheese, grated
  • 1/4 cup fresh basil or parsley, chopped
  • 3/4 cup Italian dressing (store-bought or homemade)
  • Salt and pepper to taste

Instructions

  1. Cook tortellini according to package instructions. Drain and rinse under cold water to cool.
  2. In a large bowl, combine tortellini, cherry tomatoes, cucumber, red onion, bell pepper, olives, and mozzarella.
  3. Pour Italian dressing over the salad and toss gently to coat.
  4. Season with salt, pepper, and Parmesan cheese.
  5. Garnish with fresh basil or parsley before serving.
