This Tomato Basil Chicken Skillet is a one-pan meal packed with fresh tomatoes, aromatic basil, and juicy seared chicken, all simmered in a light, flavorful sauce. Quick to prepare and perfect for weeknight dinners.

Ingredients

  • 4 boneless, skinless chicken breasts or thighs
  • 2 cups cherry tomatoes or 2 large fresh tomatoes, diced
  • 1/2 cup fresh basil leaves, chopped
  • 3 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon Italian seasoning (optional)
  • 1/4 cup chicken broth or dry white wine (optional, for deglazing)
  • 1/4 cup grated Parmesan cheese (optional, for garnish)

Instructions

  1. Heat olive oil in a large skillet over medium-high heat.
  2. Season the chicken with salt, pepper, and Italian seasoning if using.
  3. Sear the chicken on both sides until golden brown and cooked through, about 5–6 minutes per side. Remove from skillet and set aside.
  4. In the same skillet, add more olive oil if needed and sauté the garlic until fragrant, about 30 seconds.
  5. Add cherry tomatoes and cook until they begin to burst and release juices, about 5–7 minutes. Lightly smash some tomatoes to form a sauce.
  6. Deglaze the skillet with chicken broth or white wine, scraping up any browned bits.
  7. Return the chicken to the skillet and spoon the tomato mixture over the top.
  8. Simmer for a few more minutes to blend the flavors.
  9. Stir in fresh basil just before serving.
  10. Optional: Top with grated Parmesan cheese before serving.

Notes

Use canned diced tomatoes if fresh tomatoes aren’t available.Thighs stay juicier than breasts—choose based on preference.Add cream or red pepper flakes for a creamy or spicy version.Store leftovers in the fridge for up to 3 days.Not recommended for freezing due to fresh basil and tomato texture.
